The grapes are grown in the chalk/clay and limestone soils of the Middle Penedes Region - 35 Km south - west of Barcelona.
Harvesting Dates: Mid September onwards
Winemaking: After a controlled temperature fermentation (12°C) in stainless steel, a blend is made with the three grape varieties.The wine is bottled and yeast is added to set off the second fermentation. The wine remains on its lees for a minimum maturation period of nine months before the sediment is disgorged and the wine is dressed to sale.
Production: A light Cava of great delicacy and freshness. The high percentage of Parellada grape in the blend conveys a great softness of fruit aroma which combined with the low temperature 12ºC fermentation gives the wine a great delicacy.

Dosage: Brut: 9 g/l
Tasting Note: Mid lemon colour, with a persistent mousse. Clean Mediterranean fruit aromas, melon and nectarine. Soft palate, again with good fruit and length. Long dry finish.
Gastronomy: On its own as an aperitif, or with light fish dishes
